Strawberry shortcake cheesecake




Bottom crust
22 Golden Oreos Crushed
5 Tbsp Melted butter
Filling
4 8oz packages cream cheese
1 2/3 cups sugar
1/4 cup corn starch
1 Tbsp Pure Vanilla Extract
2 Large Eggs
3/4 Cup Heavy Whipping Cream
Jar of smuckers strawberry ice cream topping
Topping
12 Golden Oreos Crushed & divided into 2 bowls (one for plain Oreo topping, one for your strawberry ones)
1 1/2 Tsp Softened Butter
3 Tbsp from a small package of strawberry gelatin

Directions



Preheat oven to 350 degrees.
Line the outer perimeter of your pan with aluminum foil and generously apply butter to the inside to prevent sticking.
Crust - crush the Oreo's & incorporate the butter, press into the bottom of your springform pan.
Filling - Place one 8-ounce package of the cream cheese, 1/3 cup of the sugar, and the cornstarch in a large bowl.
Beat with an electric mixer on low until creamy, about 3 minutes, then beat in the remaining 3 packages of the cream cheese. Increase the mixer speed to high and beat in the remaining 1 1/3 cups of the sugar, then beat in the vanilla.
Blend in the eggs, one at a time, beating the batter well after each one.
Blend in heavy cream.
At this point mix the filling only until completely blended. Be careful not to overmix the batter.
Gently spoon 1/2 of the cheese filling on top of the prepared crust. spoon plops 1/2 the jar of strawberry topping here and there. Drag a butterknife through the strawberries to marblize the cheese/straberries. Spoon in the other half of the batter and the repeat the strawberry process on top. Bake for 1 hour or until there is only a slight jiggle when shook gently.
crumb topping - In a small bowl or the food processor, add the Oreo cookies and pulse into large crumbs. Add the softened butter and mix gently with a fork or your hands to make pea-sized pieces stick together. Scoop out 2 tablespoons of the mixture into a small bowl and set aside. Pour strawberry jello powder over the remaining crumbs and continue pinching the pieces together. Add more softened butter if needed for mixture to stick to the cake.

This looks fantastic, but the recipe appears to be incomplete. You have given directions for the cheese-cake layer in the middle, but where are the directions for the sponge cake layers which appear on top of and below the cheese-cake center? Also, the cake appears to have been iced all over before the vanilla and strawberry crumbs were pressed on, are there directions for how to make the icing, or is it from a can?... Please make sure your recipes are complete before posting them, thank you

Obviously she used a strawberry box cake and made a 2 layer cake. Bake the cake as directed on the box. Let cool. Then put the cake together with the above directions. Looks simple enough to me..

Recipe is not for the cake in the picture. I have made the cheese cake the recipe is for and there are a few steps missing.
Also putting this cheese cake on top of a single layer box cake would never work. The cheese cake would crash it.

You must frosting the cake before putting the crumb topping on it or it won't stick no matter how much butter you add.

Recipe is not for the cake in the picture. I have made the cheese cake the recipe is for and there are a few steps missing.
Also putting this cheese cake on top of a single layer box cake would never work. The cheese cake would crash it.

The cheesecake filling is divided to have strawberry flavor and plain cheesecake flavor. That is what gives it the illusion of strawberry cake. So there is no strawberry sponge cake or strawberry box cake. The recipe is complete. Happy baking ��

Any experienced baker can see this recipe DOES NOT match the cake in the picture. I had the actual recipe but it was lost in when we moved several years ago. The cake is baked, a cheesecake flavored filling is added between layers and the crumb coating is applied to a light coating of whipped frosting. The posted recipe is for a cheesecake, not a layer cake.

I seen this recipe before the cake is a strawberry box cake like Pillsbury you make from the box and you put the cheesecake in the middle you can even make your box cake buy your favorite cheese cake and put in the middle frost and add crumb topping.

I have personally made this cake several times and you definitely can place the cheesecake on the box cake without it crushing the bottom layer. For the crumb coat and filling I made a simple cream cheese icing then pressed the crumbs on the cake. This is one of my favorite cakes and friends and family love it.
