Apple Cake


1 1/2 cups flour
1 cup sugar
1 tsp baking soda
1/2 tsp salt
1 Tbsp apple cider vinegar
1 tsp vanilla extract
1 tsp cinnamon
1/4 tsp nutmeg
5 Tbsp canola oil
1 cup cold water
1 cup diced apples, peeled and cored (1 medium-sized apple)

How to make it

Preheat oven to 350.  Combine dry ingredients in medium to large bowl.  Make three indentations in the flour mixture.  In the first, pour the vinegar.  In the second indentation, pour the vanilla.  In the third, pour the oil.  Pour one cup of water over all and mix very well.  Stir in the apples.  Pour into well-greased 8x8 baking pan.  Bake for 45 minutes at 350.  Sprinkle with powdered sugar, serve.
