Caramel Apple Brownie Dessert




Ingredients

1 (20 ounce) package brownie mix
1/2 cup oil
1/4 cup water
3 eggs
1 (8 ounce) package Philadelphia Cream Cheese, soft
1/2 cup caramel ice cream topping, divided
1 red apple, chopped with the skin left on
1 green apple, chopped with the skin left on
6 reese peanut butter cups, coarsely chopped
1/4 cup peanuts, chopped

Total Time:45 mins

Prep Time:15 mins
Cook Time:30 mins

How to Make It

Combine brownie mix with the oil, water, and eggs.
Pour into a greased 13x9 inch pan and bake for 25-35 minutes or until cake tester comes out clean.
Cool completely.
Combine softened cream cheese with 1/4 cup of the caramel dessert topping.
Spread cream cheese/caramel mixture over cooled brownies.
Sprinkle chopped apples, peanut butter cups, and peanuts over the cream cheese/caramel mixture.
Drizzle remaining caramel dessert topping over the dessert.
Slice into squares.
Refridgerate left-overs.

BBQ Pineapple Baked Chicken

How to Make It

1. Preheat oven 350 dgrs.
2. Wash chicken.
3. Spray with non stick oil in a 9x13 inch baking casserole dish.
4. Place chickens side by side, pressing firmly to get all of chicken into dish.
5. Sprinkle pepper and salt lightly over both chickens.
6. Open can of pineapple chunks and drain off juice add juice to chicken for moisture while cooking along with 2 cups of water. Set pineapple aside for later.
7. Cover with foil and bake for an hour.
8. Now add BBQ sauce, spreading evenly with brush. Cook for 8-10 mins repeat.
9. Add remaining BBQ sauce to top of chickens and top it off with your remaining pineapple.
10. Bake for 30-45 mins. Check to see if done and if not, bake another 30-45 mins.
11. This is great with stewed red skinned potatoes and baby sweet peas and strawberry short cake.

Mom’s Chicken A La Gloria – A Family Favorite Chicken Recipe



Ingredients

3 skinless boneless chicken breasts, trimmed and filleted in half lengthwise
1/3 cup of flour
3 tablespoons vegetable oil
2 tablespoons of butter
1 (8 oz) container of sliced fresh mushrooms
1/2 cup of sherry wine
1 small can of condenced cream of mushroom soup
1/2 cup whole milk
6 slices of Muenster cheese
3 tablespoons chopped fresh parsley for garnish
Salt and pepper to taste


Prep Time: 25 minutes
Start to Finish: 1 hour

Servings: 6

How to Make It



Preheat oven to 350°F
Season both sides of the chicken with salt and pepper, dredge lightly in flour to coat both sides. Shake off excess.
Add oil to frying pan and brown chicken in batches on both sides. You don’t need to cook the chicken completely. It will finish cooking in the oven. Transfer the chicken to a 9×13-inch baking dish.
Add the butter to the frying pan and let it melt over medium high heat. Add mushrooms, season with salt and pepper and brown mushrooms until golden. Then add the sherry wine and cook for another minute or two. Add the creamy mushroom soup and milk and mix well.
Pour sauce over the chicken breasts, cover with foil and bake in oven for about 30 minutes. Remove from oven and top each piece of chicken with one slice of Muenster cheese. You can fold the cheese in half if it is too wide for the breast.
Place chicken back in oven uncovered and broil for 1-2 minutes to brown the cheese. Remove from the oven and set aside to cool.
Top with chopped fresh parsley and serve.
This dish goes well with rice or noodles because there is usually extra sauce in the baking pan.
The recipe can easily be doubled to feed a crowd.

Cheesy Ground Beef Rice Casserole



Ingredients

1 lbs ground beef (lowest fat amount possible)
2 onions, diced
2 teaspoons garlic powder
1 small can tomato sauce
1 cup cooked rice
1 cup chicken broth
1 cup sour cream (I use fat free)
2 cups shredded cheese
salt, pepper, oregano
1 cup frozen peas

How to Make It




Preheat oven to 350° F
Spray a skillet with cooking spray and turn on the heat to high
Roast the onions for a few minutes
Add ground beef and garlic, brown the ground beef completely, turn heat to medium
Spice with salt, pepper and oregano how you like it
Add rice, peas tomato sauce, 1 cup cheese and broth, let simmer for 3 minutes
Transfer everything into a casserole dish and bake for 15 minutes
Meanwhile combine the rest of the cheese with the sour cream
After 15 minutes bring the cheese/sour cream mixture on top of you casserole and bake for another 15 minutes

cheesy mexican casserole



Ingredients

1 pound ground beef
1 large onion, chopped
2 1/2 cups salsa
1 can pinto beans
1/4 cup Italian salad dressing
1 tablespoon taco seasoning
1/4 teaspoon ground cumin
6 flour tortillas (8 inches)
1 can of drained corn, or about 2 cups of frozen corn
3/4 cup sour cream
2 cups shredded Mexican cheese blend

How to Make It

In a large skillet, cook beef over medium heat until meat is no longer pink; drain.
Stir in the onions, salsa, beans, corn, salad dressing, sour cream, taco seasoning and cumin.
Spoon a layer of meat mixture on bottom of 2 quart baking dish. Sprinkle with grated cheese.
Place a flour tortilla on top of meat mixture. Layer with half of the meat mixture, and cheese. Repeat as many layers as you like.
The last and final layer should be a healthy dose of grated cheese.
Cover with foil that has been sprayed with pam or other and bake at 400° for 25 minutes, or until hot and bubbly.

Pecan Pie Cobbler




Ingreddients

1 Box refrigerated pie crusts, softened as directed on box
2 1/2 cups light corn syrup
2 1/2 cups packed brown sugar
1/2 cup butter, melted
4 1/2 teaspoons vanilla
6 eggs, slightly beaten
2 cups coarsely chopped pecans
Butter-flavor cooking spray
2 cups pecan halves
Vanilla ice cream, if desired

How to Make It



Heat oven to 425 degrees Fahrenheit. Grease 13 x 9 inch (3quart) glass baking dish with shortening or cooking spray. Remove 1 pie crust from pouch; unroll on work surface. Roll into 13 x 9 inch rectangle. Place crust in dish; trim edges to fir.
In large bowl, stir corn syrup, brown sugar, butter, vanilla and eggs with wire whisk. Stir in chopped pecans. Spoon half or filling into crust-lined dish. Remove second pie crust from pouch; unroll on work surface. Roll into 13 x9 inch rectangle. Place crust over filling; trim edges to fit. Spray crust with butter-flavor cooking spray.
Bake 14 to 16 minutes or until browned. Reduce oven temperature to 350 degrees. Carefully spoon remaining filling over baked pastry; arrange pecan halves on top in decorative fashion. Bake 30 minutes longer or until set. Cool 20 minutes on cooling rack. Serve warm with vanilla ice cream.

FRIENDSHIP CASSEROLE




Ingredients

2 - lbs ground beef
1 - 48 oz jar spaghetti sauce
2 – tablespoons sugar
1 (16 oz) - pkg medium egg noodles
1/2 - cup margarine or butter
½ - teaspoon onion salt (or onion powder)
½ - teaspoon garlic salt (or garlic powder)
½ - cup grated Parmesan cheese
1 - 12 oz pkg shredded mozzarella cheese

How to Make It



Preheat oven to 350º Brown meat and drain fat. Add spaghetti sauce and sugar to meat; simmer 20 minutes. Cook noodles as directed (AL dente); drain and toss with margarine, salts and Parmesan cheese. Spray two 9x13 pans with non-stick spray. In both pans layer half the sauce, all the noodles, rest of sauce; top with mozzarella cheese. Cover with foil; bake 45 minutes.
You can also add some sauteed green bell peppers, onions and mushrooms to the sauce. Make sure the person you are gifting this wonderful casserole to likes the veggies. If not just leave them out.
Note: Since this recipe makes enough for two casseroles, plan one for your family and one for a friend.

How to Make It

1.Combine sugar, milk, butter and salt in a medium sized saucepan. Bring to a boil, cook 5 minutes, stirring constantly.
2.Add in chocolate chips; cook until melted.
3.Remove from heat; stir in marshmallows, vanilla and nuts. Mix well.
4.Pour into a 8-inch pan.
Cool cut into squares.

My Grandmother's Fresh Peach Cobbler

1/4 cup melted butter
1 cup flour
3/4 cup sugar

How to Make It



1 Preheat oven to 350°.
2 Pour melted butter into an 8x8 pan.
3 Whisk together the flour, 3/4 cup of sugar, baking powder and milk.

5 Cover with peach slices.
6 Cover with 3/4 cup sugar (I know this will seem like a lot, but use it all.).
7 Bake until batter rises to top and forms a nice brown crust, about 20 - 30 minutes.

Cheesy BBQ Meatloaf





Ingredients

1 lb. ground beef
1 lb. ground veal or pork (I used veal, butcher mark down last week)
2 eggs, beaten
4 slices white bread, torn
1/4 C. diced onion
1/4 C. milk
1 tsp. Worcestershire sauce
2 T. yellow mustard
2 T. ketchup
1/2 tsp. salt
1/2 tsp. black pepper
1 C. sharp cheddar cheese, small diced
1 C. BBQ sauce (I used Stubbs)
1/2 C. shredded sharp cheddar cheese (for topping)

How to Make It

Put first 12 ingredients in a large bowl and using your hands combine really well. Line a baking pan with tinfoil or parchment paper, take the meat mixture and place it in the center and gently press it out to about 2" thickness. Pour the BBQ sauce over the top and spread around to cover the entire surface area. Place in a 375 degree oven for 60 minutes or until cooked through (mine took exactly 60 min.) Remove and top with shredded cheese, return to the oven for 5 min. or until melted. Let sit 5 minutes before slicing.

Earthquake Cake




Ingredients

1 cup coconut
1 cup pecans
1 box chocolate cake mix
3 1/2 cups powdered sugar
1 8oz. cream cheese
1 stick oleo/butter

How to Make It

Mix the coconut and pecans, press into buttered, floured 10 X 15 pan. Prepare cake mix as directed and pour over coconut and pecans. Mix together sugar, cream cheese and oleo. Spoon over cake mixture. Bake 350 degrees for 1 hour.
The results will be earth shattering!

Cream Cheese Pound Cake!




Ingredients

4 stick butter, 4 cups sugar, 4 cups flour (cake or all purpose), 8 large eggs, 8 oz cream cheese, flavoring of choice! I leave my cream cheese, butter and eggs out to reach room temp. Cream butter, cream cheese and sugar until smooth, add eggs one or two at a time, then add flour one cup at a time. Last, add your flavoring. I used about 2 tsp each of vanilla and banana in this one! YUM! Grease and flour your tube pan and pour in batter. Make sure you lick the beater or your cake will not rise! LOL!


Homemade Chicken and Dumplings





Ingredients

3 c. cooked chicken, cut into large pieces
½ c. butter
1/3 c. flour
½ tsp salt
1/8 tsp pepper
3 c. chicken broth
1 can cream of chicken soup (98% fat free variety works great)
Dumplings:
2 c. flour
3 tsp baking powder
½ tsp salt
1 tsp poultry seasoning
1 tsp celery seed
¼ c. oil
1 c. milk

How to Make It



Preparation
Blend butter, flour, salt and pepper in saucepan.
Add chicken broth and cook until thick. Stir in cream of chicken soup and add cooked chicken. Put in a 9×13 pan.
To prepare dumplings, mix all ingredients together and stir until moistened. Drop rounded spoonfuls onto chicken and gravy. Bake at 425° for 20-25 minutes.

Oven Fried Chicken




Ingredients

1 cup of flavored Panko
5 drumsticks, defrosted
1/4 cup of buttermilk
1 teaspoon of Cajun seasoning

How to Make It



Preheat oven to 400 degrees.
Pour breadcrumbs onto a tray or a plate.
Mix buttermilk and seasoning together.
One by one, drench chicken in the buttermilk mixture then cover in bread crumbs. Place in a greased baking/casserole dish.
Bake for 60-65 minutes at 400 or until chicken is cooked through.
Nutritional information per drumstick: 206 calories, 4 grams of fat, 32 grams of protein and 1 gram of fiber.

Loaded Potato Bites




Ingredients

- 2 cups leftover mashed potatoes
- 2 tablespoons of flour
- 2/3 cup of shredded cheddar cheese
- 3 strips bacon
- 1/3 cup scallions, chopped
- 1 egg
- 1 ¼ - 1 ½ cups Italian bread crumbs
- Oil for frying
- Salt and Pepper
- Ranch or Honey Mustard for dipping

How to Make It



1. Take potatoes out of the fridge and let sit for a few minutes to take the chill off a bit. Meanwhile shred the cheese, chop scallions, and cook bacon then dice finely. Add potatoes and flour to a large mixing bowl and stir to combine well, then add cheese, bacon, and scallions. Take about a heaping tablespoon of mixture and roll with hands into a small ball. It if doesn’t hold its shape, add a little more flour to make the potatoes sturdy. Repeat until done.
2. Heat oil in a medium sauce pan – or use your fryer – over medium/medium high heat to about 350-375 degrees. Whisk egg into a small bowl and season with salt and pepper. Place bread crumbs in an additional bowl. Dip each ball in egg and then roll in bread crumbs until fully coated. Set aside on a sheet pan.
3. Test oil with one ball. The oil should bubble when potato is in oil and ball should take about 1-2 minutes to brown and cook through. (If takes longer the oil needs to be hotter, if it browned too quickly on the outside and the inside is still cold, the temperature needs to be lower.) Once oil is ready, add potato balls in small batches and fry for 1-2 minutes – it will depend on size. Remove with slotted spoon and place on paper lined plate to allow excess oil to drain off. Repeat until done.
4. Allow to cool for a minute or two and serve with dipping sauce.

Ravioli Casserole




Ingredients

1 (28 oz) jar spaghetti sauce
1 (25 oz) pkg. frozen cheese ravioli, cooked and drained
2 cups (16 oz) small curd cottage cheese
4 cups (16 oz) shredded mozzarella cheese
¼ cup grated Parmesan cheese

How to Make It

Preheat oven to 350 degrees.
Spread ½ cup of spaghetti sauce in an ungreased 13 x 9 x 2 inch baking dish. The layer in this order - half the ravioli, 1 ¼ cups of sauce, 1 cup cottage cheese, and 2 cups mozzarella cheese. Repeat layers.
Sprinkle with Parmesan cheese.
Bake, uncovered, at 350 for 30 to 40 minutes or until bubbly. Let stand 5 to 10 minutes before serving. 6 to 8 servings

Mexican Pizzas



Ingredients:

1/2 pound Trader Joe's Ground Beef or Ground Turkey
1 medium onion, diced
1 clove garlic, minced
1 tablespoon chili powder
1 teaspoon ground cumin
1/2 teaspoon paprika
1/2 teaspoon black pepper
1/2 teaspoon salt
1 15-oz can Trader Joe's Traditional Style Fat Free Refried Beans
4 9-inch flour tortillas
1/2 cup Trader Joe's Chunky Salsa, or your favorite salsa
2 cups Trader Joe's Lite 3 Cheese Blend
2 green onions, chopped
2 roma tomatoes, diced
1/4 cup Trader Joe's Extra Large Black Pitted Olives, sliced

How to Make It

Preheat oven to 350°F.
Place meat, onion and garlic in a skillet over medium heat. Cook until beef is evenly browned. Drain off grease. Season the meat with chili powder, cumin, paprika, salt, and pepper.
Coat 2 pie plates with non-stick cooking spray. Place one tortilla in each pie plate and cover with a layer of refried beans. Spread half of the seasoned meat over each tortilla and then cover with a second tortilla. Bake for 10 minutes in the preheated oven. Remove from the oven and allow to cool slightly.
Spread half of the salsa over the top tortillas. Top each pizza with half of the cheese, tomatoes, green onions, and olives. Return the pizzas to the oven, bake until the cheese is melted, about 5 to 10 minutes. Remove from the oven and allow to cool slightly. Slice each pizza into 4 pieces and serve.

Barge Pie



Ingredients

*This fits an 8 x 8 pan.
1st Layer:
1 heaping cup graham cracker crumbs (or 1-1/4 cups finely crushed pretzels)
1/4 cup unsalted butter, melted
1/4 cup sugar
Mix all together and press into your pan.
2nd Layer:
1 pkg (8 oz) cream cheese, softened
1/2 scant cup powdered sugar (Confectioner's sugar)
1/2 large tub of Cool Whip
1 tsp pure vanilla
1/2 cup all natural creamy peanut butter
Whip this all together in a bowl and spread over crust.
3rd Layer:
1 package instant chocolate pudding
2 cups milk (you can use almond if you like)

How to Make It

Mix together according to package directions, and pour over 2nd layer. Set in refrigerator for 15 minutes to firm up the pudding.
4th Layer:
1/2 large tub of Cool Whip
Spread the Cool Whip gently over the 3rd layer, then sprinkle the top with Heath bits. * If desired, you can drizzle it with chocolate syrup or caramel syrup.
Store in the fridge!

i have never made a baked macaroni and cheese before ( only from the box )and have been anxious to make one so I finally got to try this one last night for dinner. Everyone loved it!! They said it's a keeper!. So to prepare this recipe you need first to heat oven 350 Degrees . and after that you need now to prepare a dish for working , i prefere a deep sided 9×13 pan by coating with cooking spray. Then for sure set aside.

The Pioneer Woman’s Cinnamon Rolls





Ingredients

1 quart Whole Milk
1 cup Vegetable Oil
1 cup Sugar
2 packages Active Dry Yeast
8 cups (Plus 1 Cup Extra, Separated) All-purpose Flour
1 teaspoon (heaping) Baking Powder
1 teaspoon (scant) Baking Soda
1 Tablespoon (heaping) Salt
3 cups (to 4 Cups) Melted Butter
2 cups Sugar
Generous Sprinkling Of Cinnamon_
MAPLE FROSTING:
1 bag Powdered Sugar
2 teaspoons Maple Flavoring
½ cups Milk
¼ cups Melted Butter
¼ cups Brewed Coffee
⅛ teaspoons Salt

How to Make It


Directions: Mix the milk, vegetable oil and sugar in a pan. “Scald” the mixture (heat until just before the boiling point). Turn off heat and leave to cool 45 minutes to 1 hour. When the mixture is lukewarm to warm, but NOT hot, sprinkle in both packages of Active Dry Yeast. Let this sit for a minute. Then add 8 cups of all-purpose flour. Stir mixture together. Cover and let rise for at least an hour.
After rising for at least an hour, add 1 more cup of flour, the baking powder, baking soda and salt. Stir mixture together. (At this point, you could cover the dough and put it in the fridge until you need it – overnight or even a day or two, if necessary. Just keep your eye on it and if it starts to overflow out of the pan, just punch it down).
When ready to prepare rolls: Sprinkle rolling surface generously with flour. Take half the dough and form a rough rectangle. Then roll the dough thin, maintaining a general rectangular shape. Drizzle 1 ½ to 2 cups melted butter over the dough. Now sprinkle 1 cup of sugar over the butter followed by a generous sprinkling of cinnamon.
Now, starting at the opposite end, begin rolling the dough in a neat line toward you. Keep the roll relatively tight as you go. Next, pinch the seam of the roll to seal it.
Spread 1 tablespoon of melted butter in a seven inch round foil cake or pie pan. Then begin cutting the rolls approximately ¾ to 1 inch thick and laying them in the buttered pans.
Repeat this process with the other half of the dough. Let the rolls rise for 20 to 30 minutes, then bake at 375 degrees (edited to say 375 instead of 400, as The Pioneer Woman now suggests) until light golden brown, about 15 to 18 minutes.
For the frosting, mix together all ingredients listed and stir well until smooth. It should be thick but pourable. Taste and adjust as needed. Generously drizzle over the warm rolls.

How to Make It

Preheat oven to 275°.
Grease and flour a 9 x 13 pan.
In a small bowl, mix mashed banana with the lemon juice; set aside.
In a medium bowl, mix flour, baking soda and salt; set aside.
In a large bowl, cream 3/4 cup butter and 2 1/8 cups sugar until light and fluffy.
Beat in eggs, one at a time, then stir in 2 tsp vanilla.
Beat in the flour mixture alternately with the buttermilk.
Stir in banana mixture.
Pour batter into prepared pan and bake in preheated oven for one hour or until toothpick inserted in center comes out clean.

How to Make It


A bowl of chicken and dumplings. A glass of sweet tea. It’s a meal any Kentuckian would be proud to fix and danged happy to sit down to. And it’s not hard to make. Come on, I’ll show you how.
Preparation Instructions
In a bowl, combine the flour, baking powder and salt. Cut the butter into the dry ingredients with a fork or pastry blender. Stir in the milk, mixing with a fork until the dough forms a ball.
Heavily flour a work surface. You’ll need a rolling pin and something to cut the dumplings with. I like to use a pizza cutter. I also like to use a small spatula to lift the dumplings off the cutting surface.
Roll the dough out thin with a heavily floured rolling pin. Dip your cutter in flour and cut the dumplings in squares about 2?x2?. It’s okay for them not to be exact. Just eye ball it. Some will be bigger, some smaller, some shaped funny.
Use the floured spatula to put them on a heavily floured plate. Just keep flouring between the layers of dumplings.
To cook them, bring the broth to a boil. Drop the dumplings in one at a time, stirring while you add them. The extra flour on them will help thicken the broth. Cook them for about 15-20 minutes or until they not doughy tasting. Add the cooked chicken to the pot and you’re done!

FRITO Casserol

1 lb. lean ground beef
1 can (16 oz) chili beans
1 can (8 oz) tomato sauce
1 can (15 oz) diced tomatoes
1 envelope low sodium taco seasoning
1 cup shredded cheddar cheese or (2% fat kind)
3 1/2 cups corn chips (Fritos)
1 1/4 cup fat free sour cream

How to Make It

This is so great! I’m definitely making this soon!...To prepare this recipe you need first to cook ground beef till meat is browned; drain.
Second step : At this step all what you need to do is to stir in beans, tomato sauce, diced tomatoes, taco seasoning mix & also 1/4 c. of cheese.
Step 3 :After all that work new you need to sprinkle One cup corn chips in bottom of 8x8 baking dish. And then cover with chili. Next you need to bake 350 F About 20 mins. After that you need to spread sour cream over chili. Finallly use remaining corn chips & cheese to top with . Then bake again between 4 to 5 mins longer. Serve and enjoye!!!

Simply Great Chicken




Ingredients

3 ingredient Simply Great Chicken - all you need is chicken, brown sugar and Italian dressing mix - and it only takes an hour!
About 3 1/2 pounds boneless, skinless chicken
1 ( .7 ounce) packet of Italian dressing mix
1/2 cup brown sugar, packed

How to Make It



Preheat your oven to 350 degrees Fahrenheit. Grease a 12 inch x 9 inch pan and set aside, and/or it may be preferable to line your dish with aluminum foil as the sugar tends to caramelize while baking.
Rinse chicken, pat dry with paper towels.
Combine and the dried Italian seasoning mix and the brown sugar, mixing together well.
Dip and press the chicken pieces into the mixture, coating front and back and place into your prepared pan, topside of the chicken facing up. Any extra coating that remains can just be sprinkled over the chicken.
Cook for 50-60 minutes or until chicken is done turning every 15 min and basting each time with the drippings with the final turn leaving the topside facing up for the last bit of baking.
